Orange Crush Soda Syrup

Citrus oleo-saccharum orange soda syrup, makes ~1.5 cups.

Ingredients

• 3 medium oranges
• 2 cup granulated sugar (or honey/maple)
• 1 cup boiling water
• 1 cup sparkling water (to serve)
• 1 cup ice (to serve)

Steps

1. Zest oranges into bowl (avoid white pith).
2. Rub zest into sugar until fragrant.
3. Add boiling water, dissolve sugar.
4. Juice oranges, add juice, infuse 15-30 min.
5. Strain into bottle.
6. Serve 1 tbsp syrup + ice + sparkling water.
