Potato Gravy (Lambert Homestead)
Written from memory by Zach - no source card. Best with new potatoes dug early from the garden.
Ingredients
- 1½ lb new baby potatoes (or canned boiled baby potatoes)
- 5 bacon slices
- 2 tbsp flour (sawmill gravy)
- 2 cup milk (sawmill gravy)
- 1 salt and black pepper
- 1 green onions, sliced (topping)
- 1 cornbread (serving)
Steps
- Boil potatoes until tender.
- Fry bacon crisp, set aside, keep grease.
- Fry boiled potatoes in bacon grease until golden/crisp-edged.
- Make sawmill gravy: whisk flour into bacon grease, whisk in milk, cook until thick, season.
- Serve fried potatoes topped with bacon, gravy, green onions, alongside cornbread.
