Potato Gravy (Lambert Homestead)

Written from memory by Zach - no source card. Best with new potatoes dug early from the garden.

Ingredients

  • 1½ lb new baby potatoes (or canned boiled baby potatoes)
  • 5 bacon slices
  • 2 tbsp flour (sawmill gravy)
  • 2 cup milk (sawmill gravy)
  • 1 salt and black pepper
  • 1 green onions, sliced (topping)
  • 1 cornbread (serving)

Steps

  1. Boil potatoes until tender.
  2. Fry bacon crisp, set aside, keep grease.
  3. Fry boiled potatoes in bacon grease until golden/crisp-edged.
  4. Make sawmill gravy: whisk flour into bacon grease, whisk in milk, cook until thick, season.
  5. Serve fried potatoes topped with bacon, gravy, green onions, alongside cornbread.
