Fermentation (Lacto-Fermentation)
The easiest, most forgiving preservation method in the homestead toolkit — salt, time, and the bacteria already living on the vegetable do all the work. No heat, no canner, no precision required.
Submerging vegetables in a salt brine creates anaerobic conditions where naturally-occurring lactic acid bacteria thrive, lower the food's pH below 4.6, and preserve it while producing a tangy, probiotic-rich result — different from canning (sterilized, heat-killed bacteria) but just as shelf-stable. Any vegetable ferments: cucumbers, beets, radishes, cabbage, peppers, corn, mixed vegetables.
Base Method (works for any vegetable)
- Mix a 3% salt brine by weight (roughly 1 tbsp sea or pickling salt per quart of water — not iodized table salt).
- Wash and chop vegetables — shred for a sauerkraut-style ferment, or cut into wedges/spears for whole-piece ferments.
- Pack tightly into a jar with any aromatics (garlic, dill, peppercorns, mustard seed).
- Pour brine over the vegetables until fully submerged, with at least an inch of brine above them.
- Keep everything submerged — a fermentation weight, a folded cabbage leaf, or a smaller jar inverted inside the larger one all work. This is the single most important step.
- Cover with an airlock lid, or cheesecloth secured with a rubber band, and leave at 65–75°F.
- Within 24–48 hours you'll see bubbling and cloudy brine — that's fermentation happening, not a problem.
- Taste after a week with a clean fork (not fingers) and keep tasting weekly — flavor gets tangier through week 3–4. Stop whenever you like it, then refrigerate.
A Few Specific Ferments
- Fermented pickles: small cucumbers + dill + garlic + peppercorns, 1–3 weeks (shorter stays crisper).
- Fermented beet wedges: ¼-inch wedges + garlic, 2–4 weeks (beets are dense and take longer).
- Sauerkraut base: shredded cabbage tossed with 1.5–2% salt by weight and pressed down until its own juices make the brine, 2–4 weeks.
- Fermented radishes: sliced thin, 1–2 weeks — the shortest ferment on this list.
Caveats
- A white film (kahm yeast) on the surface is harmless — skim it off. It's a sign vegetables were briefly exposed to air, not a safety problem.
- Fuzzy green, black, or white mold means discard the batch — mold can produce toxins, and it only takes hold if vegetables were exposed to air.
- Trust your nose: good ferment smells tangy and sour; rotten smells rotten. If there's any doubt, throw it out.
- Fermentation at 3–5% salt with vegetables kept fully submerged is genuinely safe — the low pH from lactic acid is what keeps pathogens from getting a foothold.
Skip Entirely
Letting vegetables float above the brine line and assuming it'll be fine — exposure to air is the one condition that actually invites mold in an otherwise very safe process. Weigh them down properly from the start.
